BRUSCHETTA CON DATTERINI E BASILICO

A fresh take on a classic, made with naturally sweet datterini tomatoes. Bright, simple, and all about the quality of the ingredients.
Ingredients
- 1 (14 oz) can La Fonte Datterini (Italian Baby Roma Tomatoes)
- 2 tablespoons extra virgin olive oil (EVOO)
- 1 garlic clove
- A handful of fresh basil leaves, torn
- Sea salt and freshly ground black pepper
- Ciabatta or baguette, sliced
Method
- Drain the La Fonte Datterini and roughly crush them by hand or with a fork to release their juices.
- Transfer to a bowl and add EVOO, basil, salt, and pepper. Mix gently and let sit for a few minutes.
- Toast the bread until golden and crisp.
- Rub each slice lightly with the garlic clove.
- Spoon the tomatoes over the warm bread and finish with a drizzle of EVOO.

Serve immediately while the bread is still warm.
