A fresh take on a classic, made with naturally sweet datterini tomatoes. Bright, simple, and all about the quality of the ingredients.

 

Ingredients

  • 1 (14 oz) can La Fonte Datterini (Italian Baby Roma Tomatoes)
  • 2 tablespoons extra virgin olive oil (EVOO)
  • 1 garlic clove
  • A handful of fresh basil leaves, torn
  • Sea salt and freshly ground black pepper
  • Ciabatta or baguette, sliced
 

Method

  • Drain the La Fonte Datterini and roughly crush them by hand or with a fork to release their juices.
  • Transfer to a bowl and add EVOO, basil, salt, and pepper. Mix gently and let sit for a few minutes.
  • Toast the bread until golden and crisp.
  • Rub each slice lightly with the garlic clove.
  • Spoon the tomatoes over the warm bread and finish with a drizzle of EVOO.

Serve immediately while the bread is still warm.
